Brewing a Double Chinook IPA

After brewing a Chinook Session IPA a few months back I started looking around for a double Chinook recipe. While I was looking for an Arrogant Bastard clone I started reading this thread over on Home Brew Talk. It featured all Chinook hop additions. With a little modification I was able to up the grain percentage to create a double IPA.


This turned out to be a great IPA. It did take longer to carbonate in the keg than I would have expected. It was fully carbed in about 3 weeks. Though it was very drinkable at 2 weeks.

Double IPA Brew Day with With Citra, Simcoe, Ekuanot, Centennial and WLP095

This time out I brew up a double IPA using a new recipe. I chose Citra, Simcoe and Ekuanot hops because they seemed to be the most common hops used in many of the big IPA’s I sampled earlier in the summer. I added in Centennial because I had it on hand and it’s one of my favorites.


I once again had priming and carbonation issues. This was the last piece of the puzzle that pushed me in to kegging. I’m very frustrated with putting in all of the hard work it takes to make a great beer. Only to be let down by priming and carbonation issues.

There is one more beer in the pipeline that went in to bottles. Then it’s kegging from here on out.

Within Us – Anchorage Brewing Company

I don’t often encounter beers from Anchorage Brewing Company here in Central Pa. The few that I have had were very good. Within Us is no exception to that. It’s a pleasant super hazy citrus forward IPA that delivers. I highly recommend picking this up if you can find it in your area.

Clencher DIPA – BuckleDown Brewing

BuckleDown has come up with am interesting combination of hops for their Clencher DIPA. I’ve used Centennial quite a bit in my last few brews. Having not yet brewed with Simcoe, it’s something I’ll be looking to use in the future. The floral and citrus undertones that make up the majority of the flavor in this beer are generated by the centennial hops. It makes for a pleasant compliment and an all around good beer.


From the BuckleDown Brewing website:

Hops are the hero in this powerhouse. Hopped throughout with Simcoe and Centennial, Clencher is loaded with pine and citrus aromas and the body and alcohol to compliment it’s assertive flavors.

Bottomcutter Imperial IPA – Bale Breaker Brewing Company

A bottomcutter is a tractor like vehicle used to cut hop vines at a given height. If you would like to see one in action you can find clips here and here. With Bottomcutter IIPA Bale Breaker has come up with an IIPA that is aggressive and fresh. Heavy with pine notes in both aroma and flavor. You can’t get much better than this.


This is the second time I’ve encountered Ekuanot hops in as many reviews. They were also in The Sister. Look for a brew day featuring Ekuanot in the near future.

From the Bale Breaker website:

Double dry-hopped with homegrown Yakima hops, Bottomcutter IIPA may be light in color but is packed with citrus and pine hop character. This Imperial IPA is brewed to finish dry, perfect for the combination of Citra®, Simcoe®, and Ekuanot™ hops.
